Ah. I love baking. It’s such a calming experience. I feel so much more relaxed after time in the kitchen (on most days). Tonight I had 3 very overripe bananas – that had accidentally ripped open this morning – sitting on my counter. What to do, oh what to do?
Banana bread of course!
I have no clue why, but I’ve been craving banana bread for the past 3 weeks. I’d made a loaf a few weeks ago when the craving began that was delicious, but of course when I went looking for it I couldn’t remember which recipe I’d made! Well, to be honest, at first I couldn’t even find it. Then – aren’t I smart? – I thought to look in our growing GF cookbook binder. Sadly, I found several banana bread recipes there and not just one. That would have been too easy.
Confusion ensued.
In the end I gave up and decided to go searching for a new recipe. A better recipe. I’ve experimented with stevia sweetened baked goods. I’ve even had a few good results! But the recipe I found tonight is A-M-A-Z-I-N-G. Ok, so maybe not that dramatic. But it is delicious!
It’s gluten-free, sugar-free, dairy-free and yeast-free! Guilt-free goodness, my Lyme friends!

It tasted better than it looks, I promise! The bread stuck in my pan and the entire loaf fell apart. Better luck next time. Hey, at least I got to eat the middle part first (my favorite). I’ll post the recipe eventually. I want to make a few revisions to it still.
I know what I’m having for breakfast. Yum!

Hi Molly!
I have had many gluten free baked goods end up a little “damaged.” They still taste good, and that is what counts right? (I told my co-workers recently, “they aren’t so much rejects, just a little beat up”, when I brought in some brownies that stuck to the pan)
Do post the recipe after you revise it, always looking for new ideas!

Did you decide to go gluten-free on your own? Or did you LLMD tell you? Mine says that some of his patients are gluten-free but he said I should be “fine otherwise,” or something. I bought a few gluten-free products- so expensive.

Dee, welcome! Sorry for the delay. I love getting comments, but sometimes it takes me a while to get back to you.
My mom went wheat-free for a few years and reduced her headaches. So I was familiar with the wheat/gluten concept, but I resisted with all my stubbornness! After a few months on abx my llmd suggested I try going gluten-free, at least partially. So I experimented. And the first time I went off my new gluten-free diet I became so sick. I was miserable! Each time I slipped up my reaction became worse, and worse. Until we decided that I was now officially gluten-intolerant. I’m not sure if I was always sensitive to gluten, or if the Lyme has caused that. But I’m very strict now, and don’t plan on experimenting with it anymore any time soon.
Many people are “ok” with gluten. But I think almost everyone feels better once they’re off of it. But, oh, it is so expensive! I know!
I’ve been reading your blog a bit lately, too. Love, love your “Learn” and “Understand” sections. I haven’t tackled anything like them here, yet.

Yum, Molly!! I have some bananas in my freezer right now that need to be used up stat. I’m not going to lie – I don’t always do well with bananas because of their high sugar. But they are oh so delicious. I can’t wait to check out the recipe!

I’ve yet to tweak still. My dad keeps eating all the bananas before they get dark enough for me to bake with! I’m thinking of plotting ahead and hiding a few this week. I feel a craving coming on again…
Love the blog suggestion! I tried a chocolate tofu pudding from there this week (thanks to you!) and it’s delish!
